Because I don't have children, I seldom get to make kid friendly recipes. This is a photo I've been dreaming about doing for a while.
And then I met Wean Green. Wean Green is an environmentally friendly company that produces safe baby products that are designed to grow with your child and family. You can use them for storing homemade baby food or even packing your husband's lunch. They also donate 1% of all profits to the environment. Aren't they awesome? You should seriously consider buying this product even if you don't win the giveaway. It is the sturdiest glass storage that I own, and I'm amazed at how tight the seal is—perhaps because they're made for diaper bags? I don't know anything about the logistics of a diaper bag, but I'm assuming if you have flimsy plasticware things can turn into a mess real quick.
My favorite part of this recipe- like everything on Living Mostly Meatless- is that it is made from scratch. (minus the gummies and sprinkles) Though it's still a dessert and not the healthiest thing, I did sneak in some flax meal "sprinkles". This pudding is so good and so easy to make that you should never buy the boxed stuff again. Bill Cosby even admitted he doesn't eat that stuff.
I made this in the Wean Green Lunch & Snack Container because I thought it would be fun for a kid to have as a surprise in their lunch box. Can you imagine your little tikes joy when he opens his lunch box and sees this? I know I'd be excited and I'm 28.
Beach Pudding
serves 4
*Vegan option below
Ocean floor
5 minutes
4 ounces cream cheese, softened
1/2 cup confectioners sugar
1 tsp cocoa
1 tsp vanilla
Blend together until smooth. Layer on the bottom of your containers.
Sand
10 minutes cook time, One hour 10 minutes refrigerator time
1/4 cup granulated sugar
2 tbsp cornstarch
1/8 tsp salt
2 cups of milk (vitamin d, 2%, or whole)
2 egg yolks
1 tbsp butter
1 tsp vanilla extract
*For a Vegan alternative: omit the eggs, add 1 more tbsp of cornstarch, sub vegan butter and cream cheese, sub soy milk and just bring everything to a boil together.
In a small pot, combine sugar, cornstarch and salt. While continuously stirring slowly add 1/4 cup of the milk. Once it's smooth add the rest of the milk. Cover and cook over medium heat for 2-3 minutes.
In a small bowl, beat eggs, vanilla, butter and a large spoonful of your milk mixture (1-2 tbsp).
Add the egg mixture to your milk mixture. Stir to incorporate. Bring to a light boil while constantly stirring. Cook for one minute while stirring, then remove from heat.
Let stand for at least 10 minutes. Transfer to bowls or containers and refrigerate for at least one hour.
After it's refrigerated add:
fish gummies on top of ocean bottom, before you pour the sand
teddy grahams in life rafts (lifesaver gummies)
sunbathing grahams (I rolled out a Swedish fish)
blue sprinkles
drink umbrellas- or make your own like I did.
your favorite oat or cracker (I used Oat Bran & Flax)
Sprinkle top with your favorite oats or graham crackers. Add the "ocean" with a few blue sprinkles. Place fish gummies in the "ocean". Feel free to add a few to the pudding before you add it to your serving bowls too. Add a drink umbrella and some bear shaped crackers for even more fun.

This is great. I'm always on the go to work or school so packing a lunch in old takeout boxes isn't the best and sturdiest way to get along. Great product and recipe, thanks for the vegan version!

I'd use it for me...I like to keep hummus and veggie sticks on hand in the fridge for whenever I need a quick healthy snack and these would be perfect hummus/veggie holders. Thanks! :)
