As much as I enjoy whipping up "fancy" little dinners, there is nothing like simple dishes. This weekend I craved roasted potatoes. Nothing special, nothing fancy, just deliciously simple potatoes. So on Saturday after our morning day date at a local coffee shop, we walked over to the fresh market down the street. I'm so smitten with all the fresh markets here, truly in love!

When we got home I got my hands dirty replanting the lavender. A little praying, a call to my dad the "gardener" of the family, and more praying I started to get hungry. Those potatoes were calling. They are so easy to make, 20 minutes later you have these gorgeous rounds. There was a little twist to how I made them, a squeeze of lime juice, and some herbs. They were just what we were craving. Just a little grilled chicken, and you've got dinner. Left overs? no problem, make scrambled eggs, grab a tortilla, add some of the potatoes and boom- breakfast taco. You're welcome.

- 1 lb red potatoes
- 1 large garlic clove, chopped
- 1/2 cup of chopped white onion
- 1 tbs fresh oregano chopped
- 3 large carrots chopped diagnoly
- 1/2 tsp ground cumin
- 1 lime,juiced
- salt & white pepper
- olive oil
- 1 tbs freshly chopped cilantro
Grab a baking dish and coat with some olive oil. Cut the potatoes in halves, add to the baking dish. Add the onions, garlic, carrots, oregano, cumin, mix into the potatoes. Drizzle more olive oil, the juice of the lime, and dash of salt & pepper. Cover with aluminum (make sure it's sealed) and pop in the oven for 20 minutes. They should be nice & tender. Top with fresh chopped cilantro before serving. ~M


You just can't beat something like this. They looks great. Love the use of cumin and lime.
